Climatronic reading

I've heard people saying the coolant temp should be running in the late 80's , I've checked mine & it reads 68 as the needle on the dash turns 90 after a few more min of driving the most I've seen it say is 78 can this just be put down to the -7 weather we've been having or is it reading incorrectly ?
Also does any 1 have a link to what the other 70 odd channels mean. Thanks
