Changing rear pads VCDS question

Going to change the rear pads on my B6 as passenger side seems to be grinding. Could be dirt etc but pads ordered just to be safe.

Anyway, looked up various vids etc on the “how to” set the EPB to service mode and happy enough with that but none of the information I can find anywhere details whether the VCDS setup has to be left connected and in place during the change,
I.e. do you connect, set service mode, remove and change pads both sides, release service mode or is it connect, set service mode, disconnect vcds, fit new pads, reconnect vcds and release service mode?

And is it both sides done whilst in service mode or do the procedure in full twice?

Any rear pads I’ve ever done on any car has always been one side done completely and pressured back up to working position before doing the other side but this is my first time with an EPB setup.
