pressure bleed the system is the best way with these.
Did both wind back all the away and using the same force or was one stiffer then the other?

lock set is the way to go barrel is line up the cut out with the dot and paper clip or i have used a very small allen key to remove I have done a few lock sets on many vag due to lost keys or damaged locks Much cheaper than going the dealer route Just the key blade will no longer be correct if order...

Sounds like the clutch master cylinder has failed had a few do it when trying to bleed

check the servo is not full of water had that before
Also check the vac pump where the pipe fits as the fitting can wear and allow play / leak
