Suspension change

Hi all well due to my front springs deciding that they have given up and slammed my car for free I got some nice shiney coilovers which will be fitted in the morning but I'm unsure how to get the old ones off I've done loads on their car makes but this is my first on a vw :)

As I open the engine I can see 3 bolts around the where the shock goes so I guess they come off and do I just in do all the things around it where the hub is lol

Any help will be welcomed as I'm flying solo n this one oh and also how do I know what height they are set at :(
